Sweet and Sour Chicken:

For the chicken:
- 1 lb (450g) boneless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 1/2 cup cornstarch
- 2 eggs, beaten
- Vegetable oil, for frying
For the sauce:
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 2 tablespoons soy sauce
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 bell pepper, cut into chunks
- 1 onion, cut into chunks
- Pineapple chunks (optional)
Instructions:
Season the chicken pieces with salt and pepper.
Dredge each piece of chicken in cornstarch, then dip into the beaten eggs, letting any excess drip off.
Heat vegetable oil in a deep pan or wok over medium-high heat. Fry the chicken pieces until they are golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Instructions:
Heat oil in a large pan or wok over medium heat.
Add the mixed vegetables and cooked protein to the pan. Stir-fry for a few minutes until the vegetables are tender.
Push the vegetables and protein to the side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they're fully cooked.
Add the cooked rice to the pan and break up any clumps.
Drizzle soy sauce over the rice and toss everything together. Season with salt and pepper to taste.
Continue to stir-fry the rice for a few more minutes until it's heated through and well combined with the other ingredients.
Garnish with chopped green onions before serving.
